STRAWBERRY CREAM CHEESE GALETTES

Strawberries and cream cheese is the perfect summer dessert match, and I have combined them in this mini strawberry cream cheese galettes recipe.

Some of you may be wondering what a galette is and the loose definition is that this French word means a free-form pie.

So it uses pie dough but it does not have the pan to keep its shape, rather it is a rustic looking dessert where the dough is often folded up over the inside filling.

This dessert is gorgeous, with the rustic pie edges and the rich strawberries peeping out the top. It is very easy to modify too, so if you want to try with blueberries or some other fruit go ahead and swap out the strawberries.

I’m thinking maybe I’ll try strawberry rhubarb next time.

The cream cheese in the middle of the strawberry cream cheese galette just takes it to the next level.

Strawberry Galettes Recipe

My family is a huge fan of cream cheese so they are always excited when I add it to a recipe. (When I was younger I actually hated cream cheese and anytime someone offered me cheesecake I would refuse.  Thankfully I have grown out of that and now fully enjoy cheesecake and anything cream cheesy that is set in front of me.)

This summer treat could be served alone, or with ice cream on top.  This is a small recipe so don’t be afraid to give it a shot!

STRAWBERRY CREAM CHEESE GALETTES

INGREDIENTS

PIE DOUGH

1 ¼ cup all-purpose flour

½ tsp salt

3 tbs unsalted butter, cold

6 tbs shortening, cold

¼ cup ice water

FILLING

2 cups roughly chopped strawberries

2 Tbs white sugar

1 tsp lemon juice

4 oz cream cheese

2 tbs white sugar

½ tsp lemon juice

½ vanilla

¼ cup milk

OPTIONAL TOPPING

A little icing sugar and a little water

slivered almonds

DOUGH

  1. Combine the flour and salt together in a bowl.  Cut in the butter and shortening either with a fork or with a pastry cutter.
  2. Measure the ¼ cup water and then add some ice cubes to it.  Add some of the water to the flour mixture and knead together with your hands.  Keep adding more water until it comes together, do not add more than necessary.
  3. Wrap your dough in saran wrap and place it in the fridge for at least an hour before using

FILLING

  1. Chop your strawberries into medium sized pieces until you have two cups worth.  Mix in the sugar and squeeze a bit a lemon into it.
  2. In a separate bowl beat the cream cheese with a hand mixer.  Add the sugar, lemon juice, and vanilla and mix until creamy and smooth.

ASSEMBLY

  1. Divide your dough into four pieces and roll each out into a rough circle.  Spread ¼ of the cream cheese mixture in the middle of each of the dough circles and then scoop ¼ of the strawberries onto each.
  2. Fold the edges of the dough around the strawberries and place on a parchment lined cookie sheet.
  3. Brush the galettes with a little milk before putting them in the oven at 350℉.  Bake for 30-35 minutes or until golden brown.
  4. If you would like to put some icing on them just combine a little water and icing sugar together in a bowl until you get your desired consistency and drizzle it over the mini galettes.  Garnish with slivered almonds if desired.
