Peanut butter is my favorite ingredient in baking. I think almost half of the desserts that I make involve peanut butter; we go through a lot of peanut butter in my house. If you’re at all like me, you will love these simple chewy oatmeal chocolate peanut butter bars.
CHEWY CHOCOLATE PEANUT BUTTER BARS

Using a microwave and simple ingredients these bars can be made quickly and effortlessly, even by someone who is new to baking. I made these chewy peanut butter bars for the first time when I was 10 years old and have slowly adapted the recipe to how I make them today. I added more peanut butter and corn syrup than the original recipe calls for and it makes these bars come together with an even chewier texture. I also added more peanut butter to the top layer of chocolate, because in my family, the more peanut butter the better!
CHEWY CHOCOLATE PEANUT BUTTER BARS
Ingredients
- FOR THE BASE
- 2 cups rolled oats
- ½ cup margarine
- ½ cup brown sugar
- ⅔ cup corn syrup
- ⅔ cup peanut butter
- ½ tsp maple extract
- FOR THE TOP LAYER
- ⅓ cup chocolate chips
- ⅓ cup peanut butter
- ½ tsp vanilla extract
Instructions

Combine oats and margarine in a large glass bowl. Microwave on high for 4 minutes, stirring once halfway through.

Add in the brown sugar, corn syrup, peanut butter, and maple extract. Microwave 2 minutes, stirring once halfway through.

Press into a greased 7 x 11 glass pan.

Microwave the chocolate chips, peanut butter and vanilla in a small glass bowl for 1 minute and then at 10 second intervals until it is smooth and creamy

Spread the chocolate layer on top of the oatmeal base
* If you want to, you can melt a little more peanut butter and drizzle it on top for an extra flare

Let sit in the fridge for a few hours before serving.
Often I have the urge to make fancy desserts that involve complicated steps, but time and time again by family asks me to make these. Creating fancy desserts can be fun, but sometimes it is good to step back and make a classic dessert that is loved by many.
This is also a good recipe to make with younger people because it doesn’t involve too many complicated steps or a hot surface like a stove or oven. You can make these with your daughter, grandson, or little brother. You’ll have a fun bonding experience and a yummy dessert to eat at the end 🙂

Recipe revisement: add 2 cups of flour, 1/2 tsp baking soda, 1/2 tsp baking powder, 1/2 tsp salt. Mix well. Press into pan. Bake at 350 degrees for 15 min or until toothpick comes out clean and it is sufficiently risen. Then top with chocolate mix, or sprinkle with mixture of chocolate and peanut butter chips, place back in the oven until chips are soft, then smooth the melted chips over the top in swirl pattern.

Oh my gosh! The chewy bars look amazing. Just by looking at the pic, I thought maybe you added some coconut to it, but there isn't. I'd love to try this and see if I don't mess it up! Could definitely be a great holiday treat!
