STRAWBERRY POKE CAKE WITH VANILLA PUDDING

DIRECTIONS

  • Preheat oven to 350.
  • Make the package of instant vanilla pudding according to directions.
  • Grease an 8×8 pan.
  • Add to the pan – 1 1/2 cups flour, 1 tsp baking powder, 1 tsp baking soda, 1 tsp salt and 3/4 cup sugar.  Mix together.
  • Make 3 holes in the batter.  Place 1 tsp vanilla in the first hole; 1/4 cup oil in the second hole and 1 tbsp vinegar in the third hole.
  • Pour 1 cup of water over the top – Stir until combined.
  • Bake cake for 30 minutes.
  • Wash and slice 1 lb of strawberries and set aside.
  • Let cake cool completely.

STRAWBERRY VANILLA POKE CAKE

This is Strawberry poke cake with vanilla pudding is incredibly easy to make and it's absolutely delicious. Top with any fruit you like.

Ingredients

  • 1 pkg of instant vanilla pudding + ingredients to make it
  • 1 1/2 cups flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 3/4 cup sugar
  • 1 tsp vanilla
  • 1/4 cup oil
  • 1 tbsp vinegar
  • 1 cup water
  • 1 lb strawberries

  8. Stir until combined. If you made it in a bowl, pour the mixture into the greased pan.
  9. Bake cake for 30 minutes.
  10. Wash and slice 1 lb of strawberries and set aside.
  11. Let cake cool completely.
  12. Poke holes in cake with end of a spoon.
  13. Pour vanilla pudding over cake and top with sliced strawberries.
  14. You can add ice cream or whip cream if desired.
  15. Enjoy!

I'm definitely going to make this cake this summer! My favorite chocolate cake recipe is very similar to the base cake recipe: cheesewithnoodles.blogspot.com/2015/09/crazy-cake.html I've been super curious about trying a yellow cake version of it. What kind of pudding do you use? What brand and what size? I'm in the US, and when I think of vanilla pudding mix, I think of the Jell-o brand, which is more yellow than what you're using, and it would be very thick if you made it a couple hours before using it like your recipe suggests. I may just have to go with it anyway and mix it up right before pouring it over the cake so it will be thin enough to go down the holes.

In any case, thanks for the great looking recipe, I'm really looking forward to trying it. It looks so yummy with all those strawberries piled on top!

The reason my pudding looks lighter is because I made it with almond milk this time - It has sometimes been a little thicker with regular milk but it has no trouble going in the holes which are quite large. It is really yummy and super easy to make.

it looks really good I'm making it now The recipe doesn't say to add 1 cup of water, at least that I can see, to the batter before mixing it. but most of these kinds of cakes call for that
