SHORTBREAD LEMON BARS

This shortbread lemon bars recipe is absolutely delicious!

And with only 5 ingredients, these shortbread lemon bars are easy to make.

I always find lemon desserts a refreshing summer treat, and these shortbread lemon bars are the perfect dessert to bring to a baby shower, Easter gathering or for coffee with a friend.

SHORTBREAD LEMON BARS

INGREDIENTS:

1 cup butter, softened
1 small box lemon pudding mix (3.4 oz)
1/4 cup white sugar
2 cups all-purpose flour
zest of 1 lemon
optional: powdered sugar for sprinkling

DIRECTIONS:

Grease a 9×13 pan and set aside.

Preheat oven to 300.

In a large mixing bowl, add butter, pudding, sugar, flour and lemon zest. Use a spatula to mix and combine well. The dough will be stiff.

Evenly press dough into prepared pan and use a 3″ spatula to lightly score the dough. Don’t cut all the way through, just score it.

Bake for 30-35 minutes or until set (no longer shiny) and golden.

Let sit for about 10 minutes and cut the shortbread flowing the lines. Do not remove from pan until completely cooled.

Optional: Dust with powdered sugar.
