Another Week Of Making Healthy Choices!

I hope you have been following along on our journey of making healthy choices. On January 1st, my husband and I made a new years resolution, but not just any new years resolution. We having been sharing updates here on the blog, on social media using the hashtag #TeamTrevJody and I post post pictures daily on Instagram of the healthy choices we are making when it comes to food.

Let me start out by sharing one of our families favorite snacks (yes, besides the amazing crispy chickpeas). We love hard boiled eggs and I share how to boil eggs perfectly.

I find it helpful to eat healthy food when it looks pretty. My daughters love it too.

I used to think that omelets needed to be loaded with cheese – I was wrong. They are so delicious with veggies – they make a great breakfast or lunch!

Our Elk ribs and quinoa dish was a huge hit this week. I can’t wait to share the recipe of the quinoa with you all in the weeks to come. So Yummy! (This from a person who did not ever love plain cooked quinoa).. Did you see our Coconut Almond Quinoa recipe?

Another thing I realized this week was how much I love homemade soups – this one was a squash soup – and wow it was delicious.

And this one was a throw together soup using veggies that needed to be used up along with some homemade chicken broth and some tomatoes I canned during the summer.

I used to find salads boring, but I am learning to get creative with my salads and I am actually enjoying them now.

UPDATE TIME:

Jody Says: It’s hard for me to write an update this week  out of fear. The reason I say fear is because I found this week to be pretty easy and I don’t want that to discourage others who are having struggles on their journey of making healthy choices. I used to be addicted to sugar and in the afternoons I hit a wall – I always needed a pick me up. Now I do not need that.

I would say the hardest part for me this week was knowing that my husband found some days hard – and I hated that he had to go through that. I am very proud of him for staying strong and choosing to make healthy choices, even when it was very hard.

I have A LOT of weight to lose, and I have no doubt that it is coming off – the good thing is that I feel beautiful even though I am very over weight. This journey is about becoming healthy, not just about a number on the scale. I weighed myself at the beginning so a year from now I can compare, but for now – having my clothes fit a little looser is a good enough measurement for me.

Trev Says: There are many things in life that are not easy, and this is one of them. However I am starting to see the payoffs of healthy eating. I am sleeping like I have never slept before. When I go to sleep, I sleep solid and ALL NIGHT . I haven’t done that in years. My cravings have also switched from Crunch Berries to steel cut oats in coconut milk with raisins. And my I have a feeling I may need to go shopping for new shorts come spring as my jeans are starting to feel more and more loose. That is a great side effect of healthy living.

Thanks so much for these postings on you and your husband's journey to a healthier life. My hubs and I are both trying to eat healthier this year and hopefully in doing so we lose some weight. This is our 3rd week and I did hit the wall for one day but I got right back on track the next day. I cannot believe how much sugar and sodium I was eating...Keep being positive and I know you guys will be successful.

Congrats, Jody! I've been eating clean since Jan. 6 and am down 16.6 lbs so far. My favourite meal is spring greens topped with red wine vinegar, salt & pepper, crispy bacon bits and soft boiled eggs. If you like runny yolks, this salad is amazing, as the yolk and vinegar combine to make a perfect dressing.

Thanks so much Leslie! I'm happy to hear that you are on an eating clean journey too. It's not always easy, but worth it for sure. I am not sure how much weight I am down since I do not want the scale to determine my mood, but my clothes are fitting differently already, which is nice. Thanks for sharing your favorite recipe, I think I would like it. I hope you have a lot of support on this journey!!

I've been following your journey and I am also loving your recipes. I also love the fact that your husband is participating and has rough days too! Men tend to make eating healthy and weight loss seem so easy, but maybe that is because they talk less and tend not to overshare their ups and downs. Thank you!

Christy, Thanks for taking the time to leave us a comment, it's great to know people are following and supporting us on our journey. I am so happy that my husband is willing to share updates here on the blog. He tried to update on Twitter, but that's not really his thing, so it means a lot that he writes up his "update" blurb for me to publish every week. I don't think it was easy for him to share that this week was tough, but I am so proud of him that he did.
