Leftover Salad

There are certain foods that I like to cook big portions of, just to have leftovers.  Things like chicken, salmon, steak or hard boiled eggs.  I love having extra in the fridge to turn into something else fabulous, later in the week.  With both kids in school, 2-3 days a week, I have time to have an actual lunch, where I can sit and enjoy the food that I prepared for myself.  Not something I slapped together while taking care of everyone else, but something I truly want to eat.  That’s when I create my leftover salads.  They aren’t always the same.  Some days the protein is different, sometimes the dressing is different.  That’s what I love about my leftover salads.  This one is very reminiscent of a kicked up Chicken Caesar salad.

Ingredients

  • 1 heart of romaine salad
  • 1 roma tomato, chopped
  • 1/2 C chopped cooked chicken
  • 1 hard boiled egg

Dressing:

  • 1/4 C mayonnaise
  • 1/2 tsp lemon zest
  • 1 clove roast garlic
  • juice of half a lemon
  • 3 Tbs olive oil
  • pinch of salt and pepper
  • 1 tsp finely chopped parsley

Instructions

  1. Place romaine lettuce on a plate. Top with tomatoes, chickend and hard boiled eggs. Drizzle with dressing.
  2. Dressing: in a mason jar, combine the mayonnaise, lemon zest, roast garlic, lemon juice, olive oil, salt, pepper and parsley. Screw on the lid and give it a good shake. Drizzle over salads.

This looks yummy and a great idea to make more to use later. I'm trying to find ways to use hard boiled eggs, and they'd be perfect for salads.

that leftover salad looks yummy. I call my hubby the leftover man he eats all the leftovers for his midnight snacks.
