APPLE CINNAMON HAND PIES
(printable recipe at end of post)
FILLING:
Combine apples, sugar, flour, and cinnamon in a bowl. Toss to coat apples well. Set aside.
CRUST:
Add flour, sugar, salt and butter in a food processor. Process for about 30 seconds until crumbly. Add 5 tablespoons of water and process. Continue to add more water, 1 tablespoon at a time until dough forms.
Remove from food processor and divide dough in half. Cover one half and place into the refrigerator until ready to use.
Roll your dough to 1/4″ thickness on a floured surface. Use a knife to cut a large rectangle, about 4″ x 10″. Spread egg wash on one side of each rectangle with a brush. Add apple filling on top of egg wash and fold over the top half of the dough to make the pocket.
Use the tines of a fork to seal the edges. Use a knife to cut small slits in the top and add egg wash and coarse sugar.
Bake for 20 minutes or until golden brown. If you want to roll the dough thinner, 1/8″ that will work, too, but bake for about 12-15 minutes.

I love this idea. Wonder if we could change it up to make pizza pockets that make an easy lunch. Even add another type of berry. What a great idea.
