Pumpkin is one of my all-time favorite flavors.
For the past few weeks my hubby, some family, friends, and co-workers have had the chance to test out my Pumpkin Spice Java Delight. It’s been a hit (even with my dairy-loving, non-paleo friends) and now I am happy to share it with all of you.
This Pumpkin Spice Java Delight features coconut oil and turmeric.
Replacing the store brand coffee creamers with organic coconut oil and turmeric may sound a little odd, but the result is delicious and nutritious.
Coconut oil contains lauric acid, which helps prevent high blood pressure and high cholesterol levels.
The short and medium-chain fatty acids help to regulate thyroid and enzyme function and help with weight reduction. It gives the body healthy, lasting energy boost.
Turmeric contains curcumin, which helps calm inflammation. Inflammation causes pain in joints and has been linked to heart disease, Alzheimer’s and cancer.
PUMPKIN SPICE JAVA DELIGHT
You will need:
- 1 1/4 cup coffee (This is the large size option if you are using a Keurig)
- 1/8 cup pumpkin puree
- 1 – 2 tsp honey
- 1 tbsp coconut oil
- 1 tsp cinnamon (You can also use 1 drop of Cinnamon or Cassia doTERRA essential oil)
- 1/8 tsp ground cloves
- 1/8 tsp ground ginger
- 1/8 tsp ground nutmeg
- 1/8 tsp turmeric
- 1 tsp coconut butter (optional)
(If you do not have the spices listed, you can use 1 tsp pumpkin pie spice instead of the cinnamon, cloves, ginger, nutmeg, and turmeric).
Directions:
Place all the ingredients (except the coconut butter) into a blender and blend on medium/high speed for 1 minute. Carefully take the lid off because it will be very hot and pour the drink into a beautiful mug. If desired, drizzle the top with melted coconut butter.
If you want it more like a Pumpkin Spice Latte you can add 1/4 cup coconut milk or milk of your choice before blending.

(The beautiful cup in the photo is one of two that my grandma gave to me to hold on to for my daughters when they are grown – the best part is that she left them each a hand-written note to go with their cups, I should post about that one day. It was so special for her to do that before she passed away. I feel blessed that I can feature some gifts from grandma in my photos, it is a way for me to preserve those special memories, we miss her so much).
