MINI EGG CHEESECAKE IN A JAR

Easter is quickly approaching and so is spring!  I love the bright colors that are appearing and the sunshine that is now making its way into my bedroom in the morning.  These Mini Egg Cheesecakes mimic the bright colors of spring!

A staple for Easter time is mini eggs and if you are one of those people that wait all year for the mini eggs to appear again then this dessert is definitely for you!

This Mini Egg Cheesecake in a Jar dessert is super fun to make and tastes delicious too.  With the combination of creamy no-bake cheesecake and the crunch of the mini eggs, this dessert will have you coming back for seconds.

For this dessert, I used some mini mason jars that my mother bought me for Christmas, but you could also use small glass cups for this dessert.

The mason jars are nice because you can screw a top on them if you want to give them away, but if you are simply making these for your family then there is nothing wrong with mini glass cups.

One warning that I have is the mini eggs are a little difficult to cut.  Take your time and do not be all ambitious trying to cut a whole bunch at a time.  Doing that will probably end with the mini eggs going everywhere!

Cut one egg at a time. (I cut them into about three pieces each) Some of the mini eggs will be mixed into your cheesecake layer, and some will be used as a simple garnish on top.

MINI EGG CHEESECAKE IN A JAR

Ingredients

  1. Mix together crushed graham cracker crumbs and melted margarine. Press into the 8 mini mason jars with your thumb.

  2. Beat together cream cheese, 1 cup cool whip, sifted icing sugar, lemon juice, and vanilla. Once well mixed gently fold in ½ cup of cut mini eggs.

  3. Scoop the cream cheese mixture into the mason jars with two spoons.

  4. Use the other ¼ cup cool whip to place a dollop on top of each mini cheesecake. Then take the other ¼ cup cut mini eggs and sprinkle them on top.

  5. Let sit for a few hours in the fridge before serving.

This recipe looks so yummy. I get chosen to make cheesecake at all of the family gatherings and it is made similar to yours minus the chocolate eggs of course but it always tastes so good.
