Mix together crushed graham cracker crumbs and melted margarine. Press into the 8 mini mason jars with your thumb.
Beat together cream cheese, 1 cup cool whip, sifted icing sugar, lemon juice, and vanilla. Once well mixed gently fold in ½ cup of cut mini eggs.
Scoop the cream cheese mixture into the mason jars with two spoons.
Use the other ¼ cup cool whip to place a dollop on top of each mini cheesecake. Then take the other ¼ cup cut mini eggs and sprinkle them on top.
Let sit for a few hours in the fridge before serving.
