My daughters love making homemade gifts every chance they get, so they were eager to help me make these delicious homemade peppermint fudge bars. They are quick and easy to make, and the peppermint, coconut and cocoa combination is simply irresistible. The best part is that this recipe is healthy and contains no refined sugar, dairy, eggs or nuts.
Homemade Peppermint Fudge Sticks
Ingredients
- 1/2 cup coconut oil
- 1/2 cup coconut butter (or honey if you want a sweet fudge)
- 1/2 cup coconut (unsweetened)
- 2 Tbsp cocao or cocoa
- 2 Tbsp pure maple syrup
- 2 drops peppermint essential oil (optional)
- parchment or wax paper

Instructions
Line a small 8x8 pan with parchment paper or wax paper.
Slowly melt the coconut oil and coconut butter. Once melted, mix in the cocoa till well blended. Add in the maple syrup, peppermint oil and coconut and again stir together till thoroughly mixed.
Pour the mixture into the pan, on top of the wax/parchment paper. Put in fridge for at least 1 hour. You can leave it in the fridge overnight if you like. Take the parchment/wax paper out and cut into squares or bars. (I like to use one of those metal flour scrapers to cut the bars as I find the the bars do not break apart like they do if I cut with a knife). Put some parchment or wax paper into a mug, add in the bars, and you have a beautiful gift. It is best to keep in the fridge till eating. It is fine for a few hours at room temperature, it will just be softer.
Notes
I like to add a bottle of peppermint oil to the gift to make it extra special.

Thanks for your comment. For kids, you may want to use 1 drop of the doterra peppermint essential oil instead of 2, depending how much they like peppermint 🙂

Lynda, I do not suggest taking essential oils internally if they are from a health food store. doterra oils are safe to use internally though, you can shop right from my link 🙂
