I love that making a homemade larabar is quick and easy!
Healthy, easy to make recipes are the best kind! These homemade LARABAR bites are made in a Vitamix using only 3 ingredients. They only take 2-3 minutes to make with no baking needed – just pop in the fridge and they are ready to enjoy in under an hour!
Now let me be completely honest – I love the bought Larabars and I think it may be more cost effective to purchase them, but when my girls were begging for a healthy snack and I had none left in the cupboard, I decided to make them some.
To make the homemade LARABAR bites you will need:
- 1 cup cashews
- 1 cup shredded unsweetened coconut
- 3/4 cup dates (pitted)
Place all ingredients in a Vitamix and blend on high till everything is mushed together. You do not want to over blend because it is nice to have a bit of texture.
Press the mixture into a 4×6 mini glass pan or even on a plate and put in the fridge for at least 45 minutes. Once cold you can slice and serve. I like to cut mine into bite size pieces for the girls.
