Homemade Chicken Noodle Soup

Lately it been alot of rainy cold weather, and it’s on days like this that I crave a hot bowl of homemade chicken noodle soup.

This is the soup I grew up eating- this is my grandmothers recipe. Doesn’t it look yummy?

Many people I know stick to the store bought variety (YUCK!) because they think homemade soup is too hard to make, which is totally not true! Albeit it does take a bit longer to make than store bought stuff- but it’s SO worth it!

I usually make a nice big pot- freeze half of it for the future when you want something easy last minute.

Here’s what you need:

  • 1 small chicken
  • 2 bay leaves
  • 3 cloves
  • 1 cinnamon stick
  • 3 whole anise star
  • 1 onion
  • 1/4 cup parsley
  • 10-20 cups of water (depending on how much your pot can hold)
  • fine egg noodles, the really thin skinny kind

Here’s how you make it:

  1. Put your chicken and onion in a soup pot and cover with water.
  2. Simmer for 2 -3 hours.
  3. Remove the chicken from heat and take the meat off the bones when it is cool enough to handle, put the meat back into the Broth.
  4. Add your bay leaf, cloves, anise star (in a spice sifter) and parsley and cinnamon stick can go directly into broth.
  5. Simmer for 1/2 hour and taste and adjust the salt if needed.
  6. remove the spices and onion (except for parsley lol)
  7. Serve the broth over cooked fine egg noodles. (Do not store leftover soup with noodles, keep them separate)
