These cottage cheese pancakes are the ultimate breakfast food. They are fluffy, delicious and pack in some extra protein in with the addition of cottage cheese. Yum!
I’m not a fan of wasting food, so when I saw that our container of cottage cheese was about to expire I thought I should use it up.
Since we love having pancakes on Saturday morning, I thought we would try cottage cheese pancakes.
I took the large container of creamed cottage cheese and pulsed it in the magic bullet till smooth.
- 4 eggs
- 1/3 cup of milk.
Then mixed in:
- 1 1/2 cups of flour
- pinch of salt
- 3 tsp baking soda
- 1/8 cup sugar (optional)
Mmm, they were so yummy!
Oh, and speaking of pancakes, did you see this CAKE that looks like a stack of pancakes? I bet it would fool almost anyone!
