For all of my friends looking for healthy recipes, you are going to absolutely love this blueberry banana bread. A delicious and healthy way to enjoy your favorite bread. This blueberry banana bread is so moist and full of flavor, you would never guess it’s gluten free and dairy free (as long as you don’t smother it in delicious butter!
I love how versatile this recipe is. You can easily swap out the blueberries for chocolate chips and some chopped walnuts or pecans if you desire.
Eat it while still warm topped with some coconut butter or grass fed butter, or we eat it just the way it is, savoring the delicious combination of blueberries and bananas teamed together in a moist bread. Enjoy!

BLUEBERRY BANANA BREAD
Preheat over to 350F. Line an 8×4” loaf pan with parchment paper and spray with non-stick cooking spray.
In a large bowl, combine the mashed bananas, vanilla and almond butter and mix together with an electric mixer until well combined.
Add in the eggs and mix until combined. Add in coconut flour, baking soda, baking powder, cinnamon and salt. Mix until incorporated.
Gently fold in blueberries.
Pour batter into prepared pan and smooth out the batter on top. Bake for 35 – 40 minutes or until toothpick comes out clean.
Remove from the oven and place on wire rack to cool for 20 minutes, then carefully remove bread from pan and place back on wire rack to cool completely.
