Baked Oatmeal ~ A New Family Favorite

We spent last weekend at my in-laws house as they were leaving this week for a trip to Phoenix.

Sunday morning my mother-in-law made a delicious baked oatmeal that was a hit with everyone. It had raisins and almonds and was just plain yummy! I had never had baked oatmeal before.

I could kick myself because I did not copy the recipe from her and of course my 6 year old asked for baked oatmeal this morning.

A lady from my Church, Betty, is one of the author’s of a popular food blog {and cookbook} called Mennonite Girls Can Cook. I did not find the recipe in the book, but did a quick search on the blog and found a recipe for Baked Oatmeal with apples and cinnamon. I knew it would not disappoint.

This is what it looked like in my bowl this morning…garnished with some bright raspberries!

Baked Oatmeal : Mommy Moment


  • 3 1/2 cups oats or quick oats (not instant)
  • 2 tsp baking powder
  • 1 tsp salt
  • 1/2 tsp cinnamon
  • 1/2 cup brown sugar
  • 1/2 cup coconut (optional)
  • 1/4 cup oil
  • 2 eggs
  • 1 apple, grated
  • 1 cup milk

Although it did not have the raisins and almonds like the recipe Kookum (grandmother in Cree) made last weekend, it was a hit with the family and I know I’ll be making it on many Sunday mornings!

Jody, Just a follow up on my previous post... I made the baked oatmeal and had doubled the recipe. My husband ate it every day (sometimes more than once,) and has asked like 3~4 times when I was going to make more. I just wanted to thank you again for such a great, healthy alternative to just a bowl of oatmeal. It is a new family favorite in this house!

As soon as I read this on Saturday, I went to the kitchen and made it (even doubled the recipe. Had to use a 9x13 pan to bake it in.) I kinda figured that it would taste similar to granola bars/cereal. I was surprised that it didn't...I guess because of everything that went into it. I'm not sure if it makes a difference or not using steel cut oats...

I have decided that the next time that I make it, I will add more of the 'extras' to it (ie. grated apples, coconut) and I will add pecans and raisins. I will be making it again soon as my husband has already eaten almost half the pan and I just made it a few days ago. Obviously, a huge hit in my house! Thanks!!

Now that sounds really interesting. I've never baked oatmeal (except as a topping) but I bet my kids would love this. They're on a HUGE oatmeal kick right now.
