SUNNY SIDE UP EGG IN CAST IRON

Let me tell you about my perfectly fried sunny side up egg in cast iron and my busy mornings as a mom. Getting the kids up, dressed, feeding them breakfast, getting lunches and backpacks packed, and onto the bus can be a bit of a rush.  And while we parents try to make sure our kids have a strong healthy breakfast, how often do we make sure the same is done for us?

HOW DO YOU START YOUR MORNING?  Did you know, that 69% of Canadians prefer their eggs scrambled?

FRIED SUNNY SIDE UP EGG IN CAST IRON

For me, there is nothing better than my favorite egg breakfast – a fried sunny side up egg in cast iron cooked with coconut oil and a touch of pink Himalayan salt.

Once the girls are on the bus, I brew myself a nice steaming mug of coffee and get started on my breakfast.  I get some coconut oil heated up in the cast iron pan and then add an egg and sprinkle on a touch of pink salt and that’s it.

There is nothing better than a hot, freshly cooked egg with a cup of coffee!  If I’m feeling extra ambitious, I will sometimes add a couple of slices of homemade bacon and some fresh cut fruit.

Eggs are a great way to start your day because of they are packed full of protein and contain natural vitamins and nutrients that are good for you!
