PEANUT BUTTER BROOKIES

Brownie, chocolate chips, and peanut butter, all combined in one tasty cookie.  BROOKIES!

I have made brookies before and they are delicious.

A little brownie, and a little cookie, what can be bad about that?

As with a lot of desserts I try, I think “Could this be better with peanut butter?”.

So I decided to tweak this recipe that I originally found from Baker by Nature, and add some peanut butter to it.

In this recipe, I added peanut butter to the brownie dough recipe and also used peanut butter cups instead of chocolate chips.

Sometimes chocolate cookies can get a little dry with all the cocoa, but these brownies are moist and chewy and the peanut butter adds a little more creaminess to the already delectable chocolate side of this cookie.

PEANUT BUTTER BROOKIE RECIPE

CHOCOLATE COOKIE DOUGH INGREDIENTS

⅓ cup margarine

½ cup brown sugar

¼ cup white sugar

1 tsp vanilla

1 large egg

1 ¼ cup all-purpose flour

½ tsp baking soda

¼ tsp salt

¾ cup chocolate chips

BROWNIE DOUGH INGREDIENTS

3 tbs margarine

3 tbs creamy peanut butter

½ cup chocolate chips

1 cup all-purpose flour

2 tbs cocoa powder

½ tsp baking soda

¼ tsp salt

½ cup brown sugar

¼ cup white sugar

1 tsp vanilla extract

1 large egg & 1 egg yolk

¾ cup chopped Reese’s peanut butter cups

COOKIE DOUGH DIRECTIONS

Beat together the margarine and the sugars until fluffy.

Add in the vanilla and egg and mix until smooth.

Add the flour, baking soda, and salt.

Fold in chocolate chips.

Place in the fridge so it firms up while you make the brownie dough.

PEANUT BUTTER BROWNIE DOUGH DIRECTIONS

Put the margarine, peanut butter, and chocolate chips together in a small pot over medium heat.

Whisk continually until they are all blended together and the mixture is smooth – about two minutes.

Take off the element and set aside.

In a separate bowl combine the flour, cocoa powder, baking soda, and salt.

Add both sugars and the vanilla extract to the chocolate mixture and using a hand-held mixer blend until smooth – about two minutes.

Add the egg and egg yolk and mix well.

Pour the flour mixture into the chocolate one and gently fold it together with a spatula only just until combined. Add in the chopped peanut butter cups

COMBING DOUGH DIRECTIONS

Preheat the oven to 350 degrees Fahrenheit.

Scoop your chocolate chip dough by the tablespoon onto a parchment lined cookie sheet and roll them into balls. Then repeat with the brownie dough.

Join a ball of each together by gently pinching them together and pressing them into a round shape on your pans.

Bake for around 12 minutes until you can see a little golden brown on the chocolate chip dough but the center of the cookies look a little undercooked.

Let cool on a wire rack and enjoy!

This cookie is fun and delicious.  Though it takes a little more time to make than your regular chocolate chip cookie, you will not be disappointed with the result.

Go ahead and enjoy a brownie and cookie all at once.
