A number of years back, a co-worker of mine treated us all with one of the most delicious desserts I had ever tasted. It was light, creamy, not heavy or overly sweet, and left your taste buds begging and pleading for more!
She gave me the recipe, and while copying it down, I knew it was far too complicated (and far too many ingredients) for my 22-year-old self and I would never attempt to make this incredible dessert.
So I enjoyed every last bite, scraping every last morsel off my plate, never to taste this deliciousness again.
Or would I?
Years later I was determined to make my own replica and I am sharing it with you because something this amazing should never be kept to just one person!
NO BAKE SALTINE CRACKER CAKE
This dessert is easy and delicious, but does need to be chilled for 24 hours

This light and silky smooth dessert is so simple to make.
Garnish with fruit to add fresh flavor and color. Almost any fruit or fruit combination is lovely with this dessert.
Some suggestions include strawberries, raspberries, blackberries, blueberries, peaches, kiwi and banana. I dare you to stop at one piece!

I’ve used canned fruit pie filling on this. Or made my own sour cherry. Works great also.

A few days after I had my first child in 2003, someone came to the house with this fluffy, light dessert in tow. I loved it then, but forgot about it. I came across this recipe while scrolling Pinterest and decided to make it on the spot, but with lemon pudding (like the dessert I had in 2003). It's delightful! It's now going to be a little treat for my now-17-year-old son who just had his four wisdom teeth pulled today. Thanks for sharing!
