Homemade Rice Pudding
My 6 year old loves to help me make Rice Pudding. She loves it for breakfast, a snack, dessert, or even to bring along for her school lunch.
It is easy to make so I thought I would share our recipe with you.
You will need:
- 2 cups short grain rice
- water
- 2 Liters whole milk (you can use almond milk or coconut milk as a substitute)
- 3/4 cup raisins (optional)
- 1/2 cup sugar (we use Xylitol)
- 1 tsp vanilla
- 1 Tbsp cinnamon
Put rice in a heavy pot and cover and add just enough water to cover the rice. Cook over medium-high heat, stirring regularly till water is mostly evaporated.
Add the milk and keep stirring and cooking over medium heat. Once it starts to thicken, add the raisins, sugar, vanilla, and cinnamon and keep stirring till it is thickened (to a yogurt like consistency).
Serve warm and enjoy.
We like to keep it in the fridge and warm it up when needed. It thickens more once it is cold so you will have to add more milk when you warm it up.
It is a favorite in our home!

I make rice pudding all the time. In fact I made some just two nights ago and my grandson came in last night looking for some. I swear he can smell it when I make it. Anyhow, I make mine in the oven. I mix my ingredients in a bowl, cook my rice on the top of the stove and then mix it all ingredients together when the rice is done. Put it in a greased pan and into the oven. Its sooo good. I use eggs in mine also and no raisins.
There are many ways to make it I guess.

Let me know what you think of it Judy! You do not have to add the raisins, sugar and cinnamon while cooking if you don’t want to…you can always add it as you eat it. It also thickens a lot, so after you have it in the fridge and re-heat it, you will most likely want to add some milk.

Making this now but wondering if 2 liters of milk is the right amount. Only put in 1 so far and that’s a LOT of milk. Am holding off on any more till I see how this turns out.
