Potatoes have always been a family favorite, but this Dilly Sweet Potato Salad made with sweet potatoes, yams and homemade mayo brings a regular potato salad to a whole new level of awesome!
Dilly Sweet Potato Salad
My family loves regular potato salad, but they love this sweet potato variety even more!
Ingredients
- 2 small sweet potatoes
- 1 small yam
- 4 chopped hard-boiled eggs (Here is how I boil eggs perfectly every time)
- 1/4 cup mayo (I use my homemade garlic mayo with Lime essential oil)
- 1 dill pickle chopped
- 2 Tbsp of the liquid from the dill pickles OR olive oil (If I use olive oil, I use the wild anithos dill olive oil from our local Prairie Oils and Vinegar store)
- 1/4 cup chopped onion
- 1-2 TBSP chopped chives along with a few extra’s to place on top
- sea salt (to taste)
Instructions
Cool and chop up the cooked sweet potatoes, yam and hard boiled eggs.
Mix together the remaining ingredients and stir everything together.

I'm use to regular white potatoes but I will definitely use sweet potatoes and yams from now on because it gives a sweeter taste and a little color. Great recipe !
