These scrumptious coconut cinnamon cookies bring a nice twist to the traditional oatmeal cookie. These cookies are a hit with the kids and hubby enjoys them too! The best part is that they are very easy to make and adapt to your liking.
Coconut Cinnamon Cookies!
Coconut Cinnamon cookies
Yield: 2 dozen
Ingredients:
- 3/4 cup brown sugar
- 1/4 cup butter
- 1/4 cup shortening or lard
- 1 egg (beaten)
- pinch of salt
- 1 tsp vanilla
- 1 cup flour
- 1 cup oatmeal
- 1 tsp baking pwder
- 1 tsp baking soda
- 1/2 cup coconut
- 1/4 cup cinnamon chips (or 1 tsp cinnamon)
- 1/4 cup chocolate chips (optional)
- 1/4 walnuts (optional)
Directions:
Cream together the butter, shortening and brown sugar. Add the beaten egg and vanilla.
Mix the remaining dry ingredients and blend into the sugar mixture. Roll into small balls and place on cookie sheet.
Bake at 350 degrees for 9 minutes.
Let sit for a few minutes before moving to cooling racks.
Notes:
These are the cinnamon chips I used in this recipe. You can use raisins, nuts or chocolate chips if you do not have the cinnamon chips on hand.
