At least once a week I have a version of this Celery Apple Salad. It pairs nicely with salmon or tuna salad and it is quick and easy to make – I love the flavours and the crunch. Since May is the month of salads I thought I would share this quick and easy salad recipe with you all.
Celery Apple Salad
This Celery Apple Salad pairs nicely with salmon or tuna salad. It makes a quick and easy lunch - I love the flavours and the crunch.
Ingredients
- 4 celery stalks
- 1 red apple
- 1/8 of a red onion
- 8 globe grapes (optional)
- juice from 1/2 a small lemon
- drizzle of olive oil
Instructions
- Chop up the celery, apple and onion and toss in a bowl.
- Slice up the grapes and add them in.
- Add the lemon juice and stir the salad.
- Drizzle with olive oil when serving.
- Enjoy
I make many variations of this salad. The basics are the celery and the apple, so feel free to change it up. You can add nuts or seeds, raisins instead of grapes, or even omit the onions and see what your kids think of it.
I love that this makes a quick and delicious side dish that I can whip up for lunch or dinner. The sweet taste from the apples goes so well with the crunch from the celery. The lemon juice keeps the apples from turning brown and the drizzle of olive oil adds the finishing touch.
I use a high quality olive oil from Prairie Oils and Vinegars in Steinbach – the one I used for this particular salad is called Leccino Extra Virgin Olive Oil.
