There are so many different types of muffins out there, the possibilities are endless! I have such fun finding new recipes and crafting my own and I’m here to present another muffin option to you!
Apple carrot muffins. I have seen recipes out there on the web for this apple carrot combination and finally decided to give it a shot. It was definitely a success.
These muffins are moist and full of flavor, and if you are stuck on banana chocolate chip muffins and need to branch out a little, today is the day my friend!

This past week I had a break from school because we had reading-week. So I was at home and was able to be in the kitchen.
I love being able to bake during the day and having some fresh snacks ready for my younger siblings when they get home from school. It fills me with joy to bake for people!
When I come home to get away from the college life, I’ll often ask my Mom what she would like me to bake. Almost every time she responds that it would be nice to have some muffins in the house for snacks and breakfast.
Something other than cookies and chips to snack on. Muffins are a healthier option than many snacks and are more filling than that bag of chips will be.
In a big bowl mix together first 7 ingredients
Add in the shredded apple and carrot and mix until coated in the flour mixture
In a separate bowl mix together the eggs, vanilla, milk and coconut oil
Pour wet ingredients into the bowl with the dry ingredients and mix together, just until combined. Don’t over mix.
Scoop batter into prepared muffin tin and bake for 15-20 minutes.
These muffins are easy to whip up, and the only hard part is waiting to eat them while the house is filling up with delicious smells of apple, carrot, and cinnamon. I invite you to give them a try!
