GARLIC POTATO CAULIFLOWER MASH

Have you ever considered a potato cauliflower mash? Cauliflower mash is a popular substitute for mashed potatoes.  However, if your children are anything like mine, they are not fond of new textures.  While a cauliflower mash is a healthy alternative to mashed potatoes, the texture is very different and can be a turn off.  By adding potatoes to your cauliflower mash, you are adding more vegetables and nutrients while keeping the texture more consistent with what people are familiar with.

GARLIC POTATO CAULIFLOWER MASH

INGREDIENTS:

Garlic Potato Cauliflower Mash

  • 3 cups raw cauliflower
  • 5 small white potatoes, peeled and cut into chunks
  • 3 tablespoons butter
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 cup Parmesan Cheese, grated
  • 2 teaspoons parsley, finely chopped
  • 2-4 tablespoons milk (optional)

DIRECTIONS:

Garlic Potato Cauliflower Mash

In a large saucepan, add cauliflower and potatoes. Cover completely with water, and heat on medium high heat until boiling. Continue to boil until potatoes and cauliflower are soft and tender, about 12-15 minutes. Drain.

Return potato and cauliflower mix to sauce pan and mash. Add butter, salt, pepper, and garlic. Stir until butter is melted. Stir in cheese and parsley. Add milk if desired to achieve a consistency you’d like.

I have tried Cauliflower mashed but didn't care much for it but next time I will try your recipe sure sounds tastier !
