When I saw this banana nut stuffed french toast recipe I knew my family would go crazy for it!

First of all, this Banana Nut Stuffed French Toast is obviously stuffed and then it has the addition of pure maple syrup and walnuts – a perfect crunch with that sweet ooey gooey banana stuffed toast – now that’s a heavenly combination. The eggs provide a complete protein source making it an all around great family breakfast.

BANANA NUT STUFFED FRENCH TOAST

For this recipe you will need:

  • 4 bananas, sliced
  • 1/4 cup chopped, toasted walnuts
  • 1/4 cup maple syrup
  • 4 1-inch (2.5 cm) thick slices whole-grain bread
  • 1 cup Egg Creations™ French Toast Blend Cinnamon, well shaken
  • 4 tsp unsalted butter, divided

#1 – Are eggs still good after the expiry date?

YES! Up to 3 weeks past the code date! I actually find that using old eggs for hard boiled eggs actually peel better than fresh ones. Did you know that a one day old egg has the exact same nutritional value as a 2 month egg.

#2 – Does the color of an egg indicate freshness or quality?

NO! The color of the egg is determined by what the hens eats – for example, adding marigold petals to the hens diet lutein levels making the yolk more orange in color. A large egg provides about 6 grams of protein and is only 70 calories.

#3 Do hens lay more eggs because they are fed hormones or steroids?

NO! – Eggs farmers do not feed hormones or steroids to egg laying hens. Learn more from Mike the chicken vet.

#4 Is there such a thing as double yolk eggs?

YES! – eggs with two yolks are called double yolk eggs, but they are rare. They are usually laid by young hens – and some people say they bring good luck!
