Layered Bean Dip

This recipe is quick and easy to make and is loved by my husband, daughters, and friends. I use my homemade yogurt in this recipe, but you can use plain yogurt or even sour cream if you desire.

Layered Bean Dip

This layered bean dip is quick and easy to make and is a fun and healthy addition to your Cinco De Mayo menu.

Ingredients

  • 1 can refried beans
  • 1 cup plain yogurt
  • 1 tsp taco seasoning
  • ½ cup cheddar cheese, shredded
  • 1 cup guacamole (1 avocado, salt, 1 tsp lemon juice)
  • 1 cup iceberg lettuce, chopped
  • 3 roma tomatoes, chopped
  • ¼ cup olives, pitted and chopped
  • 2 green onions, chopped

Instructions

Place refined beans in the bottom of a glass dish.

Next, mix together the yogurt and taco seasoning and place that mixture on top of the refried beans.

Add a layer of cheese.

Next you will add the guacamole – if you want to make your own, just mash together 1 avocado with a tsp of lemon juice and salt.

Now it is time to add the iceberg lettuce layer.

Add the roma tomatoes, olives and green onions.

We like to serve this layered bean dip with Mary’s Organic Crackers, but corn chips are also a popular side dish.
