NO BAKE CRANBERRY SEED PROTEIN BARS

These Paleo nut-free cranberry seed protein bars taste so sweet and amazing and are refined sugar free! I made these delicious nutrient-packed bars without nuts so they can easily be sent along in my kids’ lunches at school. And my kiddos love them! They’re so sweet and full of flavor, you’d never guess they were healthy! These protein bars are dense so they’ll fill your tummy while giving you a quick energy boost.

I have also made this recipe without the honey, and they have a less-sweet delicious flavor.  So perfect to keep on hand, these will become your go-to snack! And the best part?

Only 15 minutes of prep time!

NO BAKE CRANBERRY SEED PROTEIN BARS

Ingredients

  • 1/2 cup hemp protein
  • 1/2 cup hemp hearts
  • 3/4 cup dried cranberries, unsweetened or sweetened with apple juice
  • 1/4 cup dried apricots
  • 1 cup unsweetened shredded coconut
  • 1/4 cup pumpkin seeds
  • 1/4 cup unsalted sunflower seeds
  • 6 tbsp melted coconut oil
  • 10 pitted Medjool dates
  • 4 tbsp raw honey *optional*

Instructions

  1. Prepare an 8” x 10” (or 8” x 8”) glass baking dish by lining with plastic wrap.
  2. Place hemp protein, hemp hearts, cranberries, apricots, coconut, pumpkin seeds and sunflower seeds in a blender and pulse until well blended.
  3. Add in the melted coconut, dates and honey and pulse until incorporated.
  4. Press mixture into prepared baking dish.
  5. Refrigerate for 2 hours.
  6. Lift out of baking dish with the plastic wrap. Slice into rectangular bars.
  7. Serve immediately or wrap individually in plastic wrap and store in freezer until ready to eat. No need to thaw.

Refrigerate for 2 hours. Lift out of baking dish with the plastic wrap. Slice into rectangular bars.

This looks like a very tasty recipe. Good for most diets, but not for those with any kind of sugar-allergy as there's a lot of natural sugars in there.
