Veggie Bean Burger {with a kick}

I was challenged to “Ranchify” a recipe. My husband and I decided to take the challenge a wee bit further and and try a recipe WITHOUT meat!!

For those of you know my family (ahem, my hunting loving husband) you can imagine what we were up against. We both are not fans of tofu, so we wanted to come up with a recipe that would have no meat and no tofu – we did it. AND WE LOVED IT!

Let me introduce you to our Veggie Bean Burger with a kick!

Veggie Bean Burger

Veggie Bean Burger {with a kick}

Prep Time: 20 minutes
Cook Time: 15 minutes
Total Time: 35 minutes

This Veggie Bean Burger is made without tofu. It boasts a delicious flavor with a bit of a kick.

Ingredients

  • 2 shallots chopped
  • 1 can black beans
  • 1/2 onion chopped
  • 1/4 cup salsa
  • 1/4 spicy Hidden Valley Ranch
  • 2/3 cup bread crumbs
  • 2 tsp olive oil
  • 1/8 tsp liquid smoke
  • 1 cup chopped mushrooms

Instructions

  1. in 2 tsp olive oil fry 2 shallots, 1/2 onion and 1 cup chopped mushrooms.
  2. Fry till onions are brown and add 1/8 tsp liquid smoke.
  3. Mix well and place aside to cool.
  4. Take Black Beans and rinse.
  5. Dry on a paper towel a lightly chop in food processor. {Be sure that beans do not become a paste, they need to remain coarse}
  6. Once chopped mix in salsa, ranch, bread crumbs and contents of frying pan.
  7. Mix well.
  8. With wet hands form into patties and grill to taste.
  9. Enjoy

Our whole family loved this meatless burger and we already decided that it will become a recipe we use regularly. The spicy ranch dressing in the burger gives it a little kick that sends our taste-buds soaring!

we never eat meatless either, well the kids do, they hate meat, but they don't count! this looks pretty interesting though!
